About Me

Christine
I guess the most important thing about me, at least for this purpose, is I’m gluten free. I’m not gluten free by choice, I have Celiacs Disease. I’m sure everyone with Celiacs knows what a difficult condition it can be to have. I was sick for a long time before I was diagnosed. Every time I start to get frustrated with the challenges of being gluten free, I remind myself how terrible it was to be sick all the time. Unfortunately, gluten is sneaky and I still make rookie mistakes and get sick. Hopefully I can help you avoid some I’ve made. I’m a college student. I love school and my friends. I’m lucky they are all so patient and supportive of my condition. Being a gluten free college student is definitely not easy. I mean isn’t this the time in life when I’m supposed to live off Ramen Noodles, Easy Mac, and beer? Well for those of you not familiar, those all have gluten. As do most all easy-prepare meals, and certainly the cheap ones! I’m an equestrian. I absolutely love riding, it keeps me sane. Having a hobby is important, especially when you have something like Celiacs that can bring you down.
